Foodies have discovered more ways of enjoying food in a more responsible manner—whether it be the slow food movement or even patronizing only local or small mom-and-pop specialty stores. But the newest trend seems to be learning a strange craft from the professionals—butchery. It gets them involved into an oft-ignored part of food consumption. I guess this is a different kind of RAW food.
